Apple Cheddar Muffins

I love baking, especially in the fall. There's just something about baked goods, fresh from the oven that screams autumn to me. So when I was invited to take part in a Soup project that required me to use low-fat cheese in a recipe to share with my friends, this was the first thing that came to mind.

I know apple and cheddar cheese doesn't sound like a tasty combination, but trust me, it's good.

I got this recipe a long time ago and I don't have the original, but I'm pretty sure it was put out by Kraft Canada since the recipe specifically calls for "Canadian cheddar cheese".

Thing is, here in Australia, you'd be hard-pressed to find the bright orange cheddar cheese I'm used to. To me, orange = cheddar, white = mozzarella. I know, my knowledge of cheese is astounding. But I thought I might take this chance to try out this recipe with Bega So Extra Light Tasty Cheese instead.


Ingredients:
3 cups all purpose flour
2/3 cup sugar
4 tsp baking powder
1 tsp salt
1 tsp ground cinnamon
1 ½ cup shredded CANADIAN Cheddar Cheese
2 eggs
1 cup apple juice
½ cup butter, melted
2 cups finely-chopped pared apple

Directions:
Combine flour, sugar, baking powder, salt and cinnamon in large bowl.
Add and mix in cheese.
Beat eggs with apple juice, stir in butter and apple.
Add all at once to flour mixture; stir just until moistened.
Divide batter among 12 large greased muffin cups.
Bake in 375F (190C) oven 25 to 30 minutes.

Serve warm with butter. Makes 1 dozen muffins.

  1. That recipe sounds delish! We eat cheddar cheese on apple pie, so the combination makes perfect sense to me!
