Earl Grey Tea Ice Cream

This tea ice cream is the perfect compromise in the Australian autumn weather right now. It's hot when the sun is out but cold when it's not.

I've had green tea ice cream but when I saw this earl grey tea ice cream recipe, I knew I had to try it out as well. Plus, unlike green tea ice cream, I haven't seen this flavour available in the shops. I like tea-flavoured snacks. I used to dip tea biscuits into my cup of milk tea because it tasted so much better that way. Now I can have tea and biscuits even when the weather warms up.

This ice cream is creamy and flavourful and so easy to make. I'll definitely be making it again.

EARL GREY TEA ICE CREAM (from Gourmet Traveller

5 earl grey tea bags
300mL (10.5 fl oz) milk
75g (6 tbsp) caster sugar
3 medium egg yolks
250g whipping cream

1. Heat the milk and tea bags in a small sauce pan, bring to just below the boil. Remove from heat and leave to infuse for 10 minutes, then strain.
2. In a glass bowl, whisk egg yolks and sugar until it thickens and becomes pale and fluffy. Quickly whisk a quarter of the flavoured milk, then the rest of the milk stirring well to combine.
3. Place bowl over (not touching) a pan of simmering water and leave to cook, stirring occasionally until thickened. This should take 15-20 minutes. 
4. Remove the bowl from heat and leave to cool to room temperature, then stir in cream. Put in the fridge to chill. 
5. Once chilled, churn in an ice cream machine until soft set. Spoon into a container and freeze for a couple hours before serving. 
6. Serve with rich tea biscuits or thin shortbread.

My milk and egg mixture never thickened, but I whipped the cream in hopes of thickening the final mixture and mixed them together and the ice cream turned out fine.
