Homemade Pasta Sauce

When Andrew asked if it was alright that he take all the leftovers for lunch this morning, I said yes thinking I'd just whip up a quick spaghetti lunch for myself. Lunch time rolled around and that's when I discovered we didn't have any pasta sauce. Of course, this was after I had already made my spaghetti and browned the ground beef for my meat sauce.

A little frustrated (and hungry), I wondered what I could do. I couldn't run out to the store because Caleb was sleeping, so I scoured in the Internet for an easy pasta sauce recipe and hoped that by some miracle, we'd have the ingredients in our pantry.

It just so happened that the first recipe I found was the winner. For something I wasn't prepared to make, it turned out alright. Here's the recipe in case you find yourself stuck in the same situation I was in.


Ingredients:
1 tbsp olive oil
1 clove garlic, crushed
1 onion, sliced
1 tbsp tomato paste
2 x 400g cans of diced tomatoes
1 tsp sugar
salt and pepper
1/2 cup chopped basil
1/3 cup chopped parsley

Directions:
1. Heat oil in pan and soften garlic and onion.
2. Add tomato paste and stir constantly for 1 minute.
3. Add tomatoes and let it simmer until it thickens.
4. Season to taste.

Note:
I didn't have basil or parsley but I did have Italian seasoning so I just sprinkled some of that into the sauce instead. I figure it has basil and parsley (among other things) in it so it should work out alright.
