Buttermilk Pancakes

On Saturday mornings and special occasions, I look forward to the buttery scent of freshly made pancakes wafting through our house. They're delicious and easy to make.

I'm sure you'll love these fluffy pancakes as much as we do.


BUTTERMILK PANCAKES

Ingredients
1 cup flour
1 tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
dash of salt
1 cup buttermilk
1 egg
3 tbsp butter, melted

Directions
1. In a large bowl, mix together dry ingredients.
2. Whisk in milk and egg until combined, stir in butter.
3. Heat non-stick pan over medium heat. Scoop 1/4 cup of batter into pan and flip when bubbles appear on the batter. Cook until both sides of pancake are lightly browned.
4. Serve with butter and maple syrup.

Notes
Makes 4 servings - with our family, we definitely need to double the recipe for there to be enough to go around.
For me, the pancakes are buttery enough without spreading extra on.
We've also topped these pancakes with whipped cream and skor bits on special occasions and it's delicious.
