Cream of Broccoli Soup

This recipe was found on Yahoo! Answers, which isn't my recipe resource of choice but I was looking for a very specific flavour and this recipe was the most promising.

I've been searching for a Tim Horton's cream of broccoli soup copycat recipe for years now. It all began one autumn when I went to Tim Hortons on three separate occasions to order some soup and was told three separate times that they did not have it. At that point, I realized the only way I'd get this elusive cream of broccoli soup was if I made it myself.



CREAM OF BROCCOLI SOUP (from Yahoo! Answers)

Ingredients
2 teaspoons butter
1/2 cup finely chopped onion
4 cups chicken stock
3 cups chopped fresh broccoli
1/2 cup heavy cream
1/2 teaspoon salt
1/8 teaspoon ground white pepper
1/16 teaspoon ground nutmeg (optional)
Bacon thyme croutons, for garnish (optional)

Directions
In a large saucepan set over medium heat, sauté the chopped onion in butter just until it turns translucent and tender. Add the chicken stock and broccoli and bring the mixture to a boil. Reduce the heat to low, and simmer the soup for 8 to 10 minutes, until the broccoli is tender.

Using a blender, puree the broccoli soup until it is smooth. Carefully transfer the hot broccoli mixture back into the saucepan and stir in the heavy cream, salt, pepper, and nutmeg. Heat the soup through - avoid boiling it - and serve immediately. Makes 4-6 servings.
